Back in Business!

Evening folks! This morning I decided that I would start blogging again! It has been quite a while since my last post and I have started to miss it.

This time, I am really going to focus more on sharing with new recipes, how to eat healthy at restaurants, new workouts, race recaps, and more! I even might include a few vlog posts now and then.

Tonight’s post is about none other than food! After walking all over the place, going to C2, then going to Sculpt, and then walking home….my legs/body/brain was ready to sit down and enjoy a nice healthy meal. I debated with myself whether or not I should pop into Whole Foods for some “additions” to the quinoa, black bean, and vegan chicken mix already at home. Well Whole Foods won…duh…so I made a bee line to the hot food bar and threw in roasted red potatoes, green beans, grilled eggplant, onions, and raw cauliflower. I should note that I also chugged a pomegranate Bai water (love these).  

About 30 minutes later and a few pieces of roasted red potato eaten along the way :); I finally made it home. Now for the main event….dumping my Whole Foods extravaganza into the skillet with the grilled vegan chicken, liquid aminos, nutritional yeast, spicy mustard, quinoa, and black beans. Holy Yum!

Dinner tonight proved to be not only super delicious, but also colorful, and full of healthy nutrition. There were, healthy fats from the olive oil, slow burning carbohydrates (much needed after all that leg work), plant based proteins, branch chained amino acids, vitamin C/K/folate/B6/iron and whole lot more!
