On Saturday night, after an early evening run consisting of all hills, I fixed us the most delicious lasagna sans noodles and we didn’t miss the noodles one bit!
Here is how I came to making this delicious and healthy meal:
I was on Foodgawker Friday and searched paleo and what do ya know? Paleo recipes out the waz! I spotted this little gem from Eat Drink Paleo; “Show Off Paleo Lasagna” and was like I have to make this!
The recipe includes grass fed beef, eggplant, tomatoes, zucchini, onion, garlic, parsnips, and more! We substituted sweet potatoes for the parsnips and left out the spinach because there were so many layers already and it was getting pretty high in the baking dish.
We let all the vegetables and beef cook together before we added a nice layer of Parmesan cheese. After not-patiently waiting for 40 minutes the lasagna was done and our stomachs were happy! This version of lasagna combined some of my favorite ingredients and was so dang good! I was so excited there were leftovers because that meant we could enjoy some for lunch the next day.
